With longish projects, my process is always to set a daily quota, leaving time for smallish projects from other customers.

if I can meet the client's deadline, I accept it. If I can't, I calculate how long it will take me based on word count or price (price is calculated based on analysis) and offer an alternative deadline. Unless it's urgent, clients usually accept my deadline.
